Method
Build your mug
- 01
Spoon half of the creamy mash into the base of the mug and spread it gently into the curved edges.
- 02
Add the sliced sausages and most of the onion gravy, keeping a little gravy back for the finish.
- 03
Spoon over the remaining mash, then scatter on the grated Cheddar.
- 04
Finish with the reserved gravy, then scatter over 1 tablespoon of the crispy sage and onion crumb at the very last moment. Serve hot, checking that the mug and handle are comfortable to hold before moving away from the kitchen.
- 05
Do not eat it neatly layer by layer. Push the spoon down through the mug so each deep spoonful picks up mash, sausage, thick onion gravy and crisp crumb together.
Why the layers work
Mash gives the mug creamy body, sausage gives each deep spoonful substance, thick onion gravy carries flavour through the mug, and the crumb stops the whole meal becoming one soft texture.
