1.6 kg 3½ lb whole chicken
1 1 unwaxed lemon Halved.
6–8 sprigs 6–8 sprigs fresh thyme Plus extra to garnish if wanted.
3 cloves 3 cloves garlic Lightly crushed, skins left on.
45 ml 3 tbsp extra-virgin olive oil
50 g 1¾ oz unsalted butter Softened.
5 ml 1 tsp fine sea salt
2.5 ml ½ tsp freshly ground black pepper
150 ml ⅔ cup chicken stock or dry white wine
Optional Optional baby potatoes and carrots Tossed in a little oil and salt.
How to make it
Method
- Heat the oven to 200°C / 180°C fan / 400°F / Gas 6. Put the chicken in a roasting tin and pat the skin dry with kitchen paper.
- Gently loosen the skin over the breasts with your fingers, taking care not to tear it.
- Mix the 50 g softened butter with 20 ml of the olive oil, the salt and black pepper. Rub some under the breast skin and the rest over the outside of the chicken.
- Put one lemon half, a few thyme sprigs and one crushed garlic clove inside the cavity.
- Arrange the remaining lemon, thyme and garlic around the chicken. Add the optional vegetables if using, drizzle them with the remaining oil and pour the 150 ml stock or wine into the tin.
- Roast for about 1 hour 20 minutes, basting two or three times with the pan juices. If the skin browns too quickly, cover it loosely with foil.
- Check the thickest part of the chicken is fully cooked: the meat should be steaming hot, the juices should run clear and a food thermometer should show a safe temperature.
- Transfer the chicken to a board, cover loosely with foil and rest for 15 minutes before carving.
- Serve with the roasted vegetables and pan juices, finishing with fresh thyme if wanted.

Substitutions
- Use rosemary instead of thyme for a stronger piney flavour.

Storage
Remove leftover meat from the carcass, cool promptly and refrigerate in a covered container for up to 2 days, or freeze. Reheat once until steaming hot throughout. Keep raw chicken separate from ready-to-eat food and do not wash it.

- Dry skin browns more effectively, so pat the chicken thoroughly before seasoning.
- Resting the chicken for 15 minutes keeps more juice in the meat when it is carved.
- Use a thermometer in the thickest part without touching bone for the most reliable doneness check.
