What you need

Ingredients

Metric US Ingredient
100 g 3.5 oz dried apple
200 g 7 oz self-raising flour
100 g 3.5 oz cold unsalted butter Cut into cubes.
100 g 3.5 oz caster sugar
1 large 1 large egg
Pinch Pinch sea salt
A little A little olive oil For the lined trays.

How to make it

Method

  1. Heat the oven to 200°C, 180°C fan, 400°F or gas 6. Line two baking trays with greaseproof paper and rub the paper very lightly with olive oil.
  2. Process the 100 g dried apple until finely chopped so it can spread evenly through the dough.
  3. Add the 200 g self-raising flour, 100 g cold butter, 100 g caster sugar and a pinch of sea salt. Process for about one minute, until the mixture resembles fine crumbs. Remove and reserve 3 tablespoons for the topping.
  4. Pulse in the large egg until the dough comes together, stopping to scrape down the bowl if needed.
  5. Divide the dough into 24 equal pieces. Roll each into a ball, then press into a round about 4 cm wide. Space the rounds across the prepared trays.
  6. Sprinkle the reserved crumble mixture over the cookies and press it on gently.
  7. Bake for 8 to 10 minutes, until the edges are lightly golden.
  8. Leave the cookies on the trays for a few minutes, then transfer them to a wire rack to cool and firm up.

Useful notes

Equipment

  • Food processor
  • Two baking trays
  • Greaseproof paper
  • Wire cooling rack

Allergen notes

  • Contains wheat, milk and egg.

Storage

Cool completely before storing in an airtight container. Keep the cookies away from steam and moisture so the crumble topping stays crisp.

Tips

  • If the dough is too sticky to shape, chill it for 10 to 15 minutes.
  • Add a small pinch of cinnamon or nutmeg for a warmer apple-spice flavour.
  • Do not overbake: the cookies firm as they cool.
