These Apple Crumble Cookies combine dried apple with a simple buttery dough and a reserved crumble topping. The recipe makes 24 small cookies and uses a food processor for most of the mixing.

200 g7 oz self-raising flour

100 g3.5 oz caster sugar

How to make it
Method
Heat the oven to 200°C, 180°C fan, 400°F or gas 6. Line two baking trays with greaseproof paper and rub the paper very lightly with olive oil.
Process the 100 g dried apple until finely chopped so it can spread evenly through the dough.
Add the 200 g self-raising flour, 100 g cold butter, 100 g caster sugar and a pinch of sea salt. Process for about one minute, until the mixture resembles fine crumbs. Remove and reserve 3 tablespoons for the topping.
Pulse in the large egg until the dough comes together, stopping to scrape down the bowl if needed.
Divide the dough into 24 equal pieces. Roll each into a ball, then press into a round about 4 cm wide. Space the rounds across the prepared trays.
Sprinkle the reserved crumble mixture over the cookies and press it on gently.
Bake for 8 to 10 minutes, until the edges are lightly golden.
Leave the cookies on the trays for a few minutes, then transfer them to a wire rack to cool and firm up.

Storage
