Bacon-Wrapped Honey-Mustard Stuffed Chicken

A single chicken breast stuffed with a firm honey-mustard cheese filling, wrapped in bacon, glazed with barbecue sauce and cooked in the air fryer.

This is a compact one-person air-fryer dinner: a chicken breast, a firm sweet-mustard cheese filling, bacon and a barbecue glaze. Keep the filling thick and allow air to circulate around the parcel.

1 1 skinless chicken breast
2.5 ml ½ tsp garlic salt
2.5 ml ½ tsp mustard
23 g ¾ oz grated cheese or mozzarella
15 ml 1 tbsp honey
30 ml 2 tbsp barbecue sauce
1–2 slices 1–2 slices streaky bacon

How to make it

Method

  1. Heat the air fryer to 180°C/350°F. Cut a piece of baking parchment small enough to leave space around the basket for air circulation.
  2. Mix the 23 g cheese, 2.5 ml garlic salt, 2.5 ml mustard and 15 ml honey in a small bowl. The filling should be thick rather than runny.
  3. Cut a deep pocket along the side of the chicken breast without slicing all the way through.
  4. Pack the filling into the pocket, close the chicken around it and wrap with 1 or 2 bacon slices to help hold it together.
  5. Brush the outside with the 30 ml barbecue sauce and place the chicken on the parchment in the air-fryer basket.
  6. Air-fry for about 25 minutes, turning carefully after 15 minutes, until the chicken is cooked through and the bacon is browned. Very thick breasts may need longer.
  7. Rest for 3 to 5 minutes before cutting so the filling settles, then serve.

Substitutions

  • Use mozzarella for a mild stretchy filling or mature Cheddar for a stronger flavour.
  • Use a barbecue sauce that suits your preferred sweetness and heat.
  • For an oven version, bake at 200°C/180°C fan/400°F until fully cooked; timing will depend on the thickness of the chicken.

Storage

Cool leftovers promptly and refrigerate in a covered container for up to 2 days. Reheat until piping hot throughout, although the chicken will be juiciest when freshly cooked.

Tips

  • Keep the filling firm so it remains inside the chicken more easily.
  • Do not cover the whole air-fryer basket with parchment because air must circulate around the food.
  • Cooking time varies with breast thickness, so check the thickest part rather than relying only on the clock.
